Banana Pancakes
It couldn't be easier to enhance Ann Clark’s Pancake Mix with our Banana flavoring to make a new twist on this breakfast classic.

2 cups Ann Clark Buttermilk Pancake Mix

2/3 cup water

2 large eggs, room temperature

4 tablespoons unsalted butter, melted

2 teaspoons Ann Clark Banana Flavoring

¼ teaspoon ground cinnamon

2-(5 ounce each) ripe bananas, thinly sliced

Maple Syrup, if desired

Powdered Sugar, if desired

Measure dry mix into a large bowl.

Gently whisk water, and eggs, just until smooth, into the large bowl.

Whisk in the melted butter, flavoring and cinnamon, until just combined, into the large bowl.

Allow batter to rest for 5-10 minutes to thicken.

Meanwhile, pre-heat griddle or large skillet, on medium-low, adjusted heat as needed. Lightly grease hot surface.

Pour about 1/8 cup batter onto the pre-heated and lightly greased griddle or pan, add thinly sliced bananas on top, until bubbles appear on the surface, then flip and cook until golden, 1-2 minutes per side.

Serve warm and with desired toppings.
Notes & Tips:
- To make ahead: Make batter the day before and wrap and store in the refrigerator
