- Ann Clark Buttermilk Pancake Recipe
- 1 cup Fresh or Frozen Berries of Your Choice
- 1Make Buttermilk Pancakes.
- 2 Before the first flip, while the pancakes are cooking on the griddle, add 5-10 berries per pancake, leaving a little bit of space between each berry.
- 3 Wait for bubbles to appear, then flip and finish cooking until the pancakes are golden brown.
- 4 We recommend adding the berries as the pancakes are cooking, as this prevents the colors of the berries from bleeding into the batter. You can absolutely add the berries to the batter, but you may end up with discolored pancakes. By placing the berries on the pancakes while they are cooking, the berries don't begin to break down. The result is golden-brown pancakes with well-defined blueberries or other berries.
- 5 You'll be happy to know as well that it doesn't matter very much if your berries are fresh or frozen. We actually prefer frozen berries. Since they are so cold, they tend to bleed into the batter less as the pancakes cook. However, if you have some fresh blueberries or raspberries, add those! The pancakes will taste amazing either way.
