Devil's Food Cake
This is a very easy, very good dark chocolate cake, wonderful with a variety of frostings, or just dusted with confectioner's sugar. If you like you may bake the batter in 8 inch pans instead to give the cake extra height; the layers may take an extra few minutes to bake.

- 3 cups All-Purpose Flour
- 2 cups Sugar
- 2/3 cups Cocoa
- 2 teaspoons Baking Soda
- 3/4 teaspoons Salt
- 2 cups Brewed Coffee, cooled or water
- 1/2 cup Vegetable Oil
- 2 tablespoons Vinegar, Cider or White
- 2 tablespoons Vanilla Extract

To Bake the Cake
- 1 Preheat oven to 350 degrees. Grease and flour two 9 inch round cake pans and set aside.

Whisk together in large bowl:
Flour
Sugar
Cocoa
Baking soda
Salt -

Whisk together in small bowl:
Coffee or water
Vegetable oil
Vinegar (cider or white)
Vanilla extract -

Pour wet ingredients into dry and whisk until thoroughly combined.

Divide evenly into prepared pans and bake for 25 to 30 minutes at 350 degrees Fahrenheit until a butter knife inserted in center comes out clean.

Cool 10 minutes, then remove from pans onto wire racks and cool completely. Frost with Vanilla Buttercream or your favorite frosting.
