Honey Cornbread Snickerdoodle Cookies

14 tablespoons unsalted butter, room temperature

¾ cup packed light brown sugar

¼ cup honey

1 large egg

1 large egg yolk

¼ teaspoon vanilla extract

1 package Ann Clark Cornbread Mix

1 teaspoon cream of tartar

1 ½ teaspoon ground cinnamon, divided

¾ cup granulated sugar (for rolling)

Stand Mixer or Electric Mixer

Parchment Paper

Preheat oven to 350°F.

Prepare 4 large, rimmed baking sheets with parchment paper.

Combine butter, brown sugar and honey in a stand mixer with paddle attachment or electric mixer, until just lightened, about 3 minutes.

Stir in egg, yolk and vanilla until just combined, scraping the sides as needed.

Whisk Ann Clark Cornbread Mix, cream of tartar, and ½ teaspoon cinnamon in a medium bowl, until just combined.

Add the dry mix into the butter mixture, mix until combined, scraping the sides as needed.

Combined ¾ cup granulated sugar and remaining 1 teaspoon cinnamon in a small bowl.

Scoop and toss the cookie balls into the cinnamon sugar mixture to coat.

Place 8 cookies on prepared baking sheet

Place in preheated oven, until golden brown, rotating the pan about half-way through, about 10 minutes.

Remove from oven and let sit on cookie sheet for about 5 minutes, then transfer to cool on a large cooling rack.
Notes & Tips:
- To make ahead: Dough can be made ahead and refrigerated and baked from the refrigerator. Coat in cinnamon sugar before baking.
- To get perfectly rounded cookies use a large 5 inch round cookie cutter by placing over the cookie once baked and removed from the oven and with a circular motion, touching the sides of each cookie to “round’ it and make it symmetrical. Do this while the cookie is still hot and malleable.
