Molasses Raisin Bars
Use mile of robust molasses for this recipe; blackstrap will taste too strong. If you like, you can add a cup of chopped nuts along with the raisins.

- 1 cup Unsalted Butter
- 3/4 cups Packed Dark Brown Sugar
- 3/4 cups Granulated Sugar
- 1/2 cup Molasses
- 2 Eggs
- 1 tablespoon Vinegar
- 1 cup All-Purpose Flour
- 1 cup Whole Wheat Flour
- 1 teaspoon Baking Soda
- 1 teaspoon Ground Cinnamon
- 3/4 teaspoons Salt
- 1 cup Raisins

- 1Preheat the oven to 350 degrees. Grease a 9 by 13 inch baking pan and line with parchment paper or foil.

In a large bowl, beat together 2 to 3 minutes:
Butter
Dark Brown Sugar
Granulated Sugar
Molasses -

Add and beat in:
Eggs
Vinegar -

Whisk together, then stir in:
All Purpose Flour
Whole Wheat Flour
Baking Soda
Ground Cinnamon
Salt -

Add and stir in:
Raisins -

Scrape into the prepared pan and spread into an even layer with a spatula (the batter will be thick). Bake 40 to 45 minutes until lightly browned and firm, and a knife inserted in the center comes out clean. Let cool, then cut into shapes or bars. (If using a cookie cutter to cut shapes, trim the excess from around each shape and use a pancake turner to lift the shape from the pan.)
