Potato Chip Cookies
Vary the amount of salt in this recipe depending on how salty your potato chips are. You will need about 4 ounces of potato chips to make 1 cup of crumbs. You can place them in a bag and crush them with a rolling pin or pulse them in a food processor.

- 1 cup Unsalted Butter, Softened
- 1/2 cup Granulated Sugar
- 1/3 cup Brown Sugar
- 1 Large Egg
- 1/2 teaspoon Vanilla Extract
- 2 cups All-Purpose Flour
- 1 cup Potato Chip Crumbs
- 1/4 to 1/2 teaspoon Kosher Salt

Cream together until light and fluffy:
Butter
Granulated Sugar
Brown Sugar -

Beat in:
Egg
Vanilla Extract -

Whisk together then add:
All Purpose Flour
Potato Chip Crumbs
Kosher Salt -

Mix just until all ingredients are well blended. Chill dough for 3 to 4 hours before rolling. Preheat oven to 350 degrees. Roll dough out on a lightly floured counter to 1/4 inch thickness. Cut with your favorite Ann Clark cookie cutter. Bake 10 to 12 minutes, until light golden brown. Let cookies cool slightly on cookie sheets and then transfer to a wire rack to cool completely. Drizzle with chocolate ganache, if desired.
