Simple Royal Icing made with Egg White Powder

This is a super simple royal icing made with egg white powder. Simply combine all the ingredients together using a stand mixer with paddle attachment. This is your go-to base recipe for royal icing, and you can add flavoring and gel food coloring as desired. This recipe results in a thick outline/detail consistency icing, water can be added one drop at a time for looser, flood-consistency royal icing.

7 ½ cups (2 pounds) powdered sugar

4 tablespoons Ann Clark Egg White Powder

⅔ cups water

⅛ teaspoon cream of tartar

Combine sugar, egg white powder, cream of tartar and water in a stand mixer with paddle attachment or electric mixer.

Mix on low speed until combined, then turn up to medium-high speed, about 2 minutes.
Notes & Tips:
- If want to add flavor eliminate 1 tablespoon water and substitute with 1 tablespoon flavoring, such as extracts or emulsions
- Add Ann Clark Gel Food Coloring to the mix one drop at a time to make colorful royal icing.
