Strawberry Royal Icing

½ cup Ann Clark Premium Strawberry Meringue Powder

¼ cup water

2 cups (8 ounces) powdered sugar, sifted

1 teaspoon fresh squeezed lemon juice

Stand mixer with whisk attachment or electric mixer
Equipment Needed:

Whisk meringue powder and water in the bowl of stand mixer with whisk attachment or an electric mixer on medium-high, until stiff and glossy peaks form, about 5 minutes.

Turn mixer to low and add powdered sugar and lemon juice, 1/3 at a time, to the bowl, until fully combined.
Notes & Tips:
To make ahead:
- To make ahead: use in 2–3 days if stored in an airtight container or sealed piping bag. To keep it fresh, you can cover it with plastic wrap to prevent a skin from forming.
- Add a drop of Super Red Gel Food Coloring to enhance the pink color of the icing.
- If making colorful cookies, add Ann Clark Gel Food Coloring to the icing as needed.
- If a more intense flavor is desired, add a teaspoon of strawberry flavoring.
