Vanilla Buttermilk Scones

2 ¾ cup pastry flour

½ cup granulated sugar

¼ cup buttermilk powder

1 tablespoon baking powder

1 tablespoon vanilla powder

¾ teaspoon sea salt

¼ cup (1 stick) unsalted butter, cold, cut into pieces

⅓ cup whole milk, additional for brushing the top of the scone

1 large egg, room temperature

Preheat oven 400°F.

Whisk flour, sugar, buttermilk powder, baking powder, vanilla powder and salt, until combined, in a large bowl.

Add in cold butter into the large mixing bowl, work in with a pastry blender or fingers, until it resembles coarse, even crumbs.

Gently mix milk and egg, add to the large bowl, until combined with a fork.

Transfer the dough to a work surface and form into a rectangle and fold (using floured hands or bowl scraper) horizontally in thirds (like you are folding a piece of paper to go into an envelope).

Gently, repeat until it just starts to hold together, forming into a 6-inch circle.

Brush with additional milk and sprinkle tops with Ann Clark Sparkling Sugar.

Bake in preheated oven, until golden on the edges, about 15 minutes.
Notes & Tips:
- Substitute 2 teaspoons vanilla extract for the powder if desired. Add in with the eggs/milk mixture
- To make ahead: Cover baked scones tightly and store in refrigerator.
