By using a wet-on-wet technique to make these polka dots, you can instantly add more visual interest to these cookies. This technique works great with any theme or color, and once it dries, you can add more details without line-consistency royal icing.

Outline the entire shape with sky blue outline consistency icing.

For neat outlining, hold the tip of the piping bag slightly above the shape, letting the icing fall into place on the cookie.

Once the shape is completely outlined, it’s time to flood the cookie.

Flood the entire shape with blue flood consistency icing.

Move quickly onto the next step, as it needs to be done while the base icing is still wet.

Your thick flood consistency yellow icing should be roughly the consistency of conditioner—a bit more wet than toothpaste, but a bit more firm than shampoo for reference.

Pipe dots of yellow icing throughout the shape. By doing this when the base icing is still wet, the yellow dots will blend into the blue icing, creating a patterned base.
