Once dough has just come together to form a solid mass, separate the dough into 2 balls--one should be about ¼ of the dough, the other should be the remaining ¾ of the dough.

Create a depression with your thumb in the larger dough ball. Add 3 drops of Ann Clark Leaf Green food coloring gel to the depression.

Gently knead the ball of dough until the green is evenly distributed. You may want to wear food-safe gloves to avoid staining your hands.
Avoid over-kneading, as if you knead the dough for too long, it can get stiff and affect the texture of your cookies.

Next, take the small ball of dough and make a depression with your thumb. Add 2 drops of Pumpkin Orange food coloring gel to this depression, and gently knead until the color is evenly distributed.

If you plan to make your cookies later, tightly wrap each ball of dough in plastic wrap, ensuring full coverage. Dough can be kept at room temperature for about an hour, refrigerated for up to 3 days, and frozen for up to 6 weeks.

Pinch off small amounts of orange dough and roll it into small balls. Gently press the balls into the green base dough.
Keep in mind that the balls will become larger as you roll them out, so make them smaller than you want your dots to be.
